Picked by expert tea pluckers, the green tea leaves are allowed to wither only slightly to stop the  oxidation process quickly by firing or rapidly heating the leaves. When brewed at lower temperatures for less time, a cup of green tea has significantly less amount of caffeine that takes away the bitterness and ends up with a subtle sweet taste and grassy fragrance.
